Raw Dark Chocolate Cherry Pie Recipe

I love delicious inspiration! I made a chocolate pie and found I was out of some of my normal ingredients, so I made a new recipe. YUM!

I made two versions of this pie. The version on the left had a better tasting pie, and the version on the right had a better topping. I am sharing version 1 pie recipe with version 2 topping. My apologies for the grainy photos - they were taken with cell phones.
Dark Chocolate Cherry Pie Recipe
CRUST
Ingredients
2 cups coconut flakes
1/2 cup ground flax seed
2 Tablespoons coarsely ground cacao nibs (this is a great use for the leftover nibs and bits from your New Earth Trail Mixes!)
2 teaspoons mesquite powder
1/2 Tablespoon ground vanilla powder
2 Tablepoons coconut nectar
pinch of sunfire salt
2 - 3 Tablespoons water
Equipment
Food Processor
Spice Grinder or Personal Blender (to grind cacao nibs)
Pie Plate
Recipe
Step1: Coarsely grind cacao nibs in personal blender or spice grinder.
Step 2: Add all ingredients except water to food processor. Blend.
Step 3: Add 2 Tablespoons water. Blend. Add more water if necessary.
Step 4: Spread crust in pie plate. Press well!
FILLING
Ingredients
1 cup almond milk (VERY IMPORTANT: Make your own almond milk - store bought does not taste the same!)
2 ounces Irish Moss - wet weight
1 1/2 cup more almond milk
1/4 cup date paste
3 Tablespoons maple syrup
1.5 oz ground cacao nibs - grind VERY fine - or use 1/3 cup cacao powder
1/2 Tablespoon vanilla powder
3 oz fresh or frozen cherries - well drained
a pinch of sunfire salt
1.5 Tablespoons lecithin
2 oz coconut butter or coconut cream
Equipment
Vitamix or High Speed Blender

Recipe
Step 1: finely chop irish moss. Add to blender with 1 cup almond milk. Blend 60-80 seconds until smooth and thick.
Step 2: Add 1 1/2 cups almond milk, date paste, maple syrup, ground cacao (or cacao powder), vanilla powder, cherries, and salt. Blend well.
Step 3: Add lecithin, coconut butter (melted is best - use double boiler or water bath method). Blend gently until mixed.
Step 4: Pour in pie crust. Set in fridge or freezer for about 1 hour
TOPPING (Drizzle)
Ingredients
1.5 oz coconut butter or coconut cream
3 frozen cherries, defrosted
1 Tablespoon coconut nectar
2 Tablespoons water
1/2 Tablespoon Lecithin
pinch of salt
Step 1: Melt coconut butter in hot water bath.
Step 2: Add melted coconut butter and remaining ingredients in personal blender. Blend well
Step 3: Drizzle on pie. Use any remaining drizzle in your smoothie.
Let pie set in fridge for 4 - 6 hours.
